Santomiele melassa is a rare and precious creation, the result of a long and delicate , entirely artisanal transformation process of Dottato figs . Its black color with ruby ​​red highlights, its velvety texture, and its aromatic intensity make it an exceptional product, at once profound, complex, and elegant.

Obtained through the slow pressing of dried Dottato figs , a rare indigenous variety cultivated in a micro-territory within the Cilento National Park, between Castellabate, Agropoli, and Prignano Cilento, the melassa is then aged for at least six months. This aging process can only take place under the very specific climatic conditions of this area, characterized by mild winters and hot, breezy summers. The result is a true nectar, with notes of licorice , hay , honey , toasted caramel , and sun-dried figs .

On the palate, the sweetness of caramel blends with the subtle bitterness of toasted sugar, enhanced by the rich aroma of Dottato figs . Naturally gluten-free, Santomiele molasses also stands out for its nutritional qualities: a natural alternative to white sugar, it provides fewer calories and a significant concentration of minerals such as calcium , magnesium , and iron , as well as B vitamins.
