Saba, also called aceto cotto, from Acetaia La Vedetta, is an ancestral specialty of Emilia-Romagna, stemming from a long-standing peasant tradition. It is obtained by slowly and for a long time cooking grape must , without fermentation or the addition of vinegar, until the sugars and aromas are naturally concentrated.
