La Vedetta's 50-year-old DOP traditional balsamic vinegar represents the ultimate expression of Modena tradition. Made exclusively from cooked grape must , it is aged according to the traditional DOP method through 50 travasi , a long and rigorous process that structures all the nobility of this exceptional vinegar.
The transfer process is central to the traditional method. Each year, a small quantity of vinegar is transferred from one cask to another within a series of barrels of decreasing size, crafted from different types of wood. With each transfer, the vinegar naturally concentrates through evaporation, absorbing the characteristics of the wood and gaining complexity. Repeated over decades , this patient process shapes a product of unparalleled depth, where time itself becomes an integral ingredient.
This balsamic is used in precious drops , as a finishing touch to gourmet dishes, on very mature cheeses, noble meats or select desserts, where it reveals its full sensory dimension.
La Vedetta is a traditional acetaia located in the heart of the Modena region. Faithful to the strictest DOP rules, it perpetuates a know-how passed down through generations, based on patience, precision and absolute respect for time, even in its most extreme expressions.
