The Blanc de Blancs Soléra Extra-Brut is a unique cuvée crafted using the Solera method, from a blend of Chardonnay grapes from different vintages, aged in oak casks . Each year, a selection of the finest Premier Cru Chardonnay grapes is added to the maturing wine, creating stylistic continuity and great aromatic depth.

The wine is golden in color, enlivened by fine and elegant bubbles. The nose is expressive, refined, and subtle, marked by aromas of white flowers, white mint, and citrus fruits, particularly grapefruit. On the palate, the attack is crisp and lively. The whole then unfolds into a beautiful aromatic complexity, where dried fruits bring roundness, depth, and balance, while maintaining a controlled tension and an elegant austerity.

With a low dosage of 2 g/l and an alcohol content of 12.2%, this extra-brut champagne offers a pure and precise expression of the grape variety. Bottled in February 2015 and disgorged in December 2017, it embodies a style that is at once straightforward, gastronomic, and elegant. It can be enjoyed as an aperitif or paired with fish and shellfish.

Daniel Dumont is an independent winemaker based in Rilly-la-Montagne. He produces his champagnes with respect for the terroir and time, using High Environmental Value certified viticulture and precise winemaking, faithful to the authentic expression of the Premier Cru vineyards of the Montagne de Reims.
