La Vedetta's traditional 12-year-old DOP balsamic vinegar is an authentic and patient expression of Modena's expertise. Made exclusively from cooked grape must , it is slowly aged for twelve years according to the traditional method, in a succession of wooden barrels of various types, which shape its depth and balance.
On tasting, the texture is dense and velvety. The bouquet reveals harmonious notes of ripe fruit, fine wood, and delicate caramel. On the palate, the balance between natural sweetness and measured acidity is precise, long, and elegant, with remarkable aromatic persistence.
